Potato And Broccoli Curry

In A Saucepan, Saute
- 1 Tablespoon Olive Oil
- 1 Clove Garlic -- minced
- 1/2 Teaspoon Ground Coriander
- 1/2 Teaspoon Ground Turmeric
- 1/4 Teaspoon Ground Cumin
- 1/4 Teaspoon Ground Ginger
- 1/8 Teaspoon Dry Mustard
- 1 Dash Ground Red Pepper
- 1/2 Tablespoon Olive Oil
- 1 Cup Water
- 1 Potato -- diced (unpeeled ok)
- Vegetables
- 1 Cup Broccoli -- chopped
- 1 Carrot -- sliced
- 1/4 Teaspoon Salt
- 1/2 Tablespoon Curry Powder
Cover and simmer until broccoli and carrots are tender. Serve with rice or pasta.
